The Leek
Way back in 1536 the leek was shown as an emblem in Shakespeare's play Henry V. also legends suggest that a battle fought between the Welsh and the Saxons was in a field of leeks and the Welsh wore the leeks in their helmets so as to distinguish themselves from the enemy.
The leek has always been an important part of the Welsh diet where it has thrived on the wet Welsh soil, is full of flavour and easy to pull from the ground and cook, very little of it cannot be used i.e. only the top of the green leaves and the white root base is wasted. The green part of it is a source of Vitamin A. Several traditional dishes have evolved therefore such as Leek and Potato soup served hot, chicken and leek soup, leek porridge, braised leeks or boiled leeks as a main course accompaniment.
