Welsh Rarebit
When I was a child on holiday in Wales, quite a favourite supper dish was grilled cheese. Nowadays it is hardly thought to be a good idea to have such a high fat & protein snack just before bed. It both smelt and tasted very appetising and a real treat if one was allowed to stay up long enough to enjoy supper with the adults.
A classier cheesy dish is the rarebit often served as a lunch to-day. Even Fortnum & Mason restaurants present this on their lunchtime menu.
Welsh Rarebit (for 4 slices)
1/2lb grated cheese
1tsp margarine or butter
2 tsp Worcester sauce
1 tsp dry mustard
2 tsp plain flour
4 tbsp milk or beer
Mix the ingredients well and to melt the cheese warm the mixture gently whilst stirring, spread the divided melted mixture onto 4 slices of toast. Return to the grill to brown the tops.
Welsh rarebit is a tasty lunch, tea or anytime snack.
