Faggots
A name which conjures up my visits to Neath market where at its outer walls various tiled kitchens and a few rough tables were serving hot faggots in dark rich gravy and people were enjoying the taste with obvious gusto. Most Welsh people get quite passionate about the taste of faggots although the name is unpleasant and doesn't do justice to the richness of this nutritious dish.
Faggots
1.5 lbs raw pigs liver
2 onions minced
3oz suet
salt and pepper and chopped sage to taste
Mix the ingredients together and form into balls or torpedo shaped portions. Bake for 30 minutes in a moderate oven. Make a flour sauce with the liquor in the pan at the end of the cooking period.
Serve with mashed potatoes and maybe for the fat conscious substitute the suet with vegetable suet.
