Bara Brith
Bara Brith (speckled bread) a Welsh fruit bread
6 oz (175 g) raisins
6 oz (175 g) sultanas
2 oz (50 g) Barbados sugar
15 fl oz (425 ml) pint hot black tea (optional)
1 oz (25 g) fresh yeast
1 lb (450 g) wholemeal flour
1/2 teaspoon salt
1/2 teaspoon ground mixed spice
4 oz (125 g) butter plus extra for greasing
The above is a list of ingredients from a traditional recipe.
I have made this bread using my bread-maker to prepare the dough and then baking in the oven.
For the bread-maker: -
1 egg beaten
6 fl oz water
1 tbsp skimmed milk powder
2 oz light brown sugar
1/2 tsp salt
3 oz butter
1 lb strong white flour
1 sachet easy-bake yeast
1 tsp mixed spice
4 oz raisins
3 oz currants
2 oz mixed peel
mix ingredients and cook on dough raisin beep cycle in the bread-maker. Add the dried fruits at the raisin-beep.
Form the dough into a round or oval shape and set to prove the mixture in a microwave and then bake at 190 deg C for 30 minutes. Finally a honey glaze can be used to 'gild the lily'.
This can be made with white or wholemeal flour; the wholemeal version will be a little denser and smaller than the white. There is always the option of half white and half wholemeal and the use of already mixed dried fruits.
Serve hot or cold and spread with Welsh butter. Very nice lightly toasted for breakfast or to accompany afternoon tea.
