My Webpage has now been online for three years and I continue to update the appearance of my pages.

Overnight Cake

Overnight Cake (Teisen dros nos)

225g (8oz) SR Flour
110g (4oz) Sugar
110g (4oz) Butter or Margarine
110g (4oz) Mixed Dried Fruit (sultanas, raisins, mixed peel)
1 tbsp Vinegar
1 tsp Cinnamon
1 tsp Ginger
½ tsp Bicarbonate of Soda
Milk

Rub the flour, sugar, cinnamon and ginger into the butter until the mixture looks like breadcrumbs.
Add the mixed dried fruit.
Stir in enough milk to produce a mixture of a dropping consistency.
Mix the bicarbonate of soda with the vinegar and quickly stir into the mixture.
Leave in a cool place overnight.
Pre-heat oven to 180°C: 350°F: Gas 4.
Grease a baking tin, line with buttered greaseproof paper.
Bake for 1-1½ hours in a moderate oven.
